Recipe: Quinoa Cakes

       Quinoa Cakes

    • 3 tablespoons extra-virgin olive oil
    • 1 medium organic yellow onion, diced
    • 1 cup quinoa, rinsed and drained
    • 2 cups low-sodium organic chicken stock
    • Kosher salt and freshly ground black pepper    
    • 1/2 cup organic dried cranberries
    • 1/2 cup chopped organic green olives (like Cerigolas)
    • 1/4 cup rough chopped organic  fresh flat leaf parsley
    • 1/3 cup sliced almonds, toasted
    • A squeeze of organic  fresh lemon juice

 

          Directions

In a medium saucepan add quinoa and lightly toast over medium high heat. Once it starts to smell nutty tip out into a bowl and set aside. Place saucepan over medium heat and add olive oil. Add diced onion and saute for 3-4 minutes until translucent. Season with salt and pepper. Add toasted quinoa back to pot, cover with chicken stock and bring to a simmer. Cover and cook for 10 minutes.

After 10 minutes, add cranberries and olives and stir well. Allow to cool slightly then fold in fresh parsley, almonds and add a drizzle of extra-virgin olive oil and a squeeze of fresh lemon juice.

Raw Wraps

Linda’s comments:  I made these wraps and all I can say is yummmmmy..

Raw Wraps

2 cups flax seeds, ground in a coffee grinder not used for coffee
1 cup almonds, ground finely in a food processor
1 carrot, grated
2 zucchini, grated
1 tsp. garlic powder
Sea salt or Herbamare to taste
1 Tbsp. dried basil
1 green onion, chopped
1 tsp. lemon juice
1/2 cup sundried tomatoes, soaked for 1 hour or so
1/2 cup water

Place all ingredients in a food processor and mix until well combined.  Using a spatula or a spoon, spread the mixture onto a Teflex dehydrator sheets, making a 6-7 inch circles, 1/4 inch thick.  Dehydrate for 4-6 hours at 100 degrees or until they are able to be turned over.  Flip them over onto mesh dehydrator sheets and continue to dry until the are dry but still flexible.    Makes 8 wraps.
